Tony's Baked Salmon with Okinawa Sweet Potatoes

Ingredients:

  • Salmon fillet(s)
  • Okinawan sweet potatoes (also called Hawaiian sweet potatoes)
  • Fresh dill
  • One lemon
  • One tomato
  • One avocado
  • Salt
  • Pepper

Preparation:

Baste the salmon fillets with lemon juice, and season with salt and pepper. Sprinkle with fresh dill. Bake the fillets in an oven preheated to 350°F for 20 minutes.

Peel and cut the Okinawan sweet potatoes into 1-inch cubes. Steam the potato cubes for approximately 15 minutes until they are fork-tender.

Presentation:

Serve the salmon fillets and sweet potatoes garnished with slices of tomato and avocado for a colorful and delightful meal.
