Tomato Vegetable Stew On A Bed of Cheese Mashed Potatoes (Optional)

Ingredients & Amounts

  • 4 Tablespoons Extra Virgin Olive Oil
  • 1 Large Onion
  • 1 Teaspoon (Optional) Salt
  • 1 Heaping tablespoon Tomato Paste
  • 1/2 Large jar Hearty or Robust Tomato Spaghetti Sauce with onions & mushrooms
  • 2 Tablespoons Barbecue sauce
  • 1 Quart Water
  • 5 Fresh Carrots, washed and cut into diagonal ovals
  • 2 Small or 1 Large Heads of fresh broccoli florets, washed and cut into small florets from stems
  • 1/2 bag Fresh spinach, wash and remove stems
  • 1 Small can Green Giant Brand sliced, broiled in butter mushrooms
  • 2 Oz. Raisins


Instructions & Comments

In a dutch oven, pour olive oil. Heat. Saute onions until transluscent. Sprinkle salt evenly over onions and stir. Add tomato paste, spaghetti sauce, and barbecue sauce. Stir well. Add water, and stir well. Add carrots, stir. Cover and let boil for about 15 minutes until carrots are tender.

Add broccoli, stir. Cover and let boil for about 5 minutes. Add spinach, stir, and just let it briefly wither. Add mushrooms and raisins and stir well. Cover and turn off the heat. Let sit for about 5 or 10 minutes. Serve over a bed of mashed potatoes with sharp cheddar cheese, butter or margarine, and milk stirred in to taste.

Great with Buffalo wings!

This is a great crowd pleaser for those chillier days! With prep time, including cutting and cleaning the veggies, about 1 1/2 hours to 2 hours.

I love to cook! It's an alchemical (magical) experience for me, working with the fire, the water, the earth, the air to transform raw material into delectable cooked fare. I always said that I have three alchemical laboratories (or places where I create sheer magic!) in my life: my stove, my bed, and my computers. In those places, I'm queen of my world. Except, when my computers malfunction, or I have insomnia, or I burn something! Then it's "Off with their heads!" until some selmblance of equanimity returns to me, till I bring order out of chaos once again. And for just those few moments, once more, all's right with the world!
