Sweet potato pudding

Originally developed by Robert Cavanaugh. This recipe can be sliced like pie or spooned out like pudding.

Ingredients

Makes 8 servings.

  • 2½ cups sweet potato
  • 1 cup nonfat milk
  • 1 cup nonfat dry milk
  • 1 cup Egg Beaters
  • 1 cup Splenda sweetener
  • 1 tsp cinnamon, ground
  • ½ tsp ginger, ground
  • ½ tsp nutmeg, ground

Instructions

  1. Peel, cut into 1" sections, boil sweet potatoes.
  2. Combine remaining ingredients in a bowl and mix.
  3. Drain potatoes when soft and mash.
  4. Combine all ingredients, mix thoroughly.
  5. Pour into 9" deep pie dish.
  6. Bake at 400°F for 45 minutes or until a knife inserted pulls out clean.
  7. Slice into 8 sections.
