Sweet potato pudding

Originally developed by Robert Cavanaugh. This recipe can be sliced like pie or spooned out like pudding.

Ingredients
Makes 8 servings.
- 2½ cups sweet potato
- 1 cup nonfat milk
- 1 cup nonfat dry milk
- 1 cup Egg Beaters
- 1 cup Splenda sweetener
- 1 tsp cinnamon, ground
- ½ tsp ginger, ground
- ½ tsp nutmeg, ground

Instructions
- Peel, cut into 1" sections, boil sweet potatoes.
- Combine remaining ingredients in a bowl and mix.
- Drain potatoes when soft and mash.
- Combine all ingredients, mix thoroughly.
- Pour into 9" deep pie dish.
- Bake at 400°F for 45 minutes or until a knife inserted pulls out clean.
- Slice into 8 sections.
