Spicy Chickpeas

Ingredients and amounts

  • 1 small onion, peeled and chopped
  • 1 clove garlic, peeled and chopped
  • 1 tsp fennel seeds
  • Pinch asafoetida (optional)
  • 1 inch peeled fresh ginger root, chopped
  • 1 teaspoon olive or canola oil
  • 1 can chickpeas, 240g drained weight
  • 100g kale, shredded

Instructions and comments

In a large non-stick pan gently heat the oil and add all the ingredients except the chickpeas and kale. Cover the pan and cook slowly to soften the onions. While this is cooking steam the kale till just done.

When the onions are soft add the kale and drained chickpeas. Continue to cook until heated through and serve. This goes well with curried chicken.

Alternatively you could use fresh spinach instead of kale in which case just drop the raw spinach into the pan of softened onion and let it wilt.


420 calories for the complete recipe, it will serve 2 or 3 as a side dish.
