Salmon Balls

Ingredients and amounts

  • 1 tin salmon 420g
  • 1 spring onion, or a tablespoon red onion, finely chopped
  • 1 egg white
  • 1-2 tablespoons lemon juice, and the grated rind of half a lemon
  • Black pepper to taste, pinch of herbs to taste, such as dill.
  • Oat bran to coat

Instructions and comments

Preheat oven to 200C Remove skin and larger bones from salmon and mash with a fork. Add all ingredients except the bran. Form into 14 balls – I use a heaped tablespoon scoop to get equal sizes. Roll lightly in the bran to coat. Place on non-stick baking sheet, oven bake 12-14 minutes.

(This shows how easy it is to adapt a non-CR recipe. The original contained whole egg and matzo meal and was fried. )

About 600 calories for the whole recipe.

Serve hot with steamed vegetables or cold with salad. One or two with salad and light dressing make a nice appetiser.

These freeze really well.
