Quick Tangy Vegetables with Couscous

Ingredients and amounts
To serve 2
- 50g wholegrain couscous
- A selection of vegetables, diced small – I used red onion, zucchini, and bell pepper
- 4 olives, chopped
- 1-2 tablespoons of your favourite tangy relish. I used smoked garlic and tomato.

Instructions and comments
1. Steep couscous in boiling water as directed on pack.
2. Steam vegetables until just done.
3. Fluff the couscous with a fork, then fold in the vegetables and olives.
4. Stir the relish through the mixture
5. This part can be done in advance, if there are other dishes to prepare. Reheat about two minutes in a microwave to serve.
As this is such a flexible dish, the calories and nutrients will depend on your personal choices. We ate this with grilled salmon and green salad. The dish would probably make a good salad served cold but there wasn’t any left to test this!
