Oat and flax porridge

Ingredients for two portions

40g rolled oats 20g Prewett's oatbran and oatgerm 20g flax seeds, milled fine in a food mill

Method

Place all ingredients in a large microwave safe dish - it will bubble up a lot as it cooks. Add 12 fl oz water, mix and microwave on high for 5 minutes, giving it a stir every minute or so. If you want a thinner porridge you could add a little more water at this stage. Let it rest one minute before serving. This has a lovely rich nutty taste!

Variations

This is the basic recipe but you can sweeten or not as you wish, add chopped fresh or dried fruit or nuts. It is nice served hot with a little skim or soya milk on top. If you don't want to cook it the dry mix can be soaked overnight in the fridge.
