To practice CR it is important that it is only the energy (measured by calories) in the diet that is reduced, not other essential nutrients.
To practice CR properly, it is important to tally the amounts of nutrients in the food that you eat. (In fact, it is important that everyone tally nutrients carefully, since studies show that majority of people in the West have shortages of at least a few essential nutrients.) There are several web sites and personal computer programs that can help you to maintain an adequate level of nutrients while keeping the calories low.
