Ingredients and amounts
- 4 cherry tomatoes, halved – or more if they are very small
- half a lime, cut in wedges
- 3 leaves fresh basil
- Angostura bitters
- balsamic vinegar
- ice
- soda water

Instructions and comments
1. Place the tomatoes, basil and lime in a chunky 8oz glass
2. Use a cocktail muddler or wooden spoon to crush the ingredients together well to release the flavours and juices.
3. Add a dash of bitters and three ice cubes.
4. Top up with soda water and add a few drops of balsamic vinegar.
