Mediterranean Prawns

Ingredients and amounts

  • 1 medium onion, peeled and chopped
  • 1 clove garlic, peeled and chopped
  • 1 large aubergine (eggplant), cut in small cubes. You could peel this if you like, but I didn’t.
  • 1 can chopped tomatoes in natural juice
  • 1 green pepper, chopped
  • 2 courgettes (zucchini) sliced
  • 1 pack (about 250 gm) prawns
  • 1 tbs (about 30g) black olives, chopped
  • Herbs and seasoning to taste.

Instructions and comments

Put the first four ingredients into a large pan, bring to a simmer and cook until the eggplant is soft, about 15-20 minutes. Add the green pepper, zucchini, herbs and seasoning, and cook about 5 or 6 minutes until the vegetables are just done. Add prawns and olives and cook until heated through.
