Konjac yogurt pudding

This is more a method than a recipe as it depends so much on personal preferences. It has the advantage of being very quick and easy to do.

To make two puddings start with 5-6 floz (about 5 to 6 eighths of an American cup) of your favourite yogurt. Pour this into a jug. Now dilute with water – I have made this very successfully diluting up to 12 floz (one and a half cups). Add your preferred sweetener if wished and flavouring such as pure vanilla or a few drops of culinary flavouring oil. Now for the konjac, and as it gels very quickly have your dessert dishes ready. If you don’t have an electric whisk, don’t worry, this works very well with a small wire whisk. Just take a tablespoon of konjac powder and add gradually, whisking as you go. (Two teaspoons will also work and you will get a much softer gel) As soon as all the konjac is in, pour equal amounts into the dishes. I often divide this between two screw top jars and store in the fridge then take to work to eat at lunchtime. Great on its own or topped with berries.

Variations

I have tried this using fruit flavoured mineral waters as the diluting liquid and this gives a great tangy result.

Or make a Konjac Trifle. First make up the pudding with just flavoured water, and divide between serving dishes, adding some berries. When that has gelled, make up a batch of the yogurt pudding and add it as another layer. This looks very pretty in glass dishes.

Of course from here it is but a small step to the Chocolate Konjac Pudding.

To make one pudding, whisk a tablespoon of best cocoa with 6oz (3/4 cup) water, and the non-caloric sweetener of your choice. The type and amount of sweetener is a personal thing. You could also add a few drops of vanilla or chocolate extract. Now gradually add two teaspoons of konjac, whisking all the time. I like this amount as it makes a denser pudding. Pour it in a nice dish and wait till gelled. And there you are. One day I will make one that lasts long enough for me to photograph it!
