Baked ‘rice’ Pudding

Ingredients and amounts
- 1 cup vanilla yogurt
- 1 cup konjac ‘rice’ rinsed with water and well drained.
- the non-caloric sweetener of your choice, to taste (optional)
- 1 egg white
- powdered cinnamon

Instructions and comments
1. Pre-heat an oven to 150 degrees C.
2. Mix the yogurt, sweetener if used, ‘rice’ and eggwhite.
3. Divide the mixture equally between 4 small ovenproof ramekins.
4. Put the ramekins in a deep-sided ovenproof container. Pour water into the container so it comes about half way up the sides of the ramekins. This helps them bake more evenly.
5. Bake 20 minutes. Take out of the oven, dust the tops with cinnamon, and allow to cool in the water. When cool, refrigerate. About 30 calories per pudding depending on the yogurt used.

Variations
This is just too easy but if you want a really really instant pudding you could just stir 'rice' into the yogurt!
